Utter Glorious Barbecue Perfection!

Here in the last couple months we at the Monkey household have become Dave Ramsey believers. It is finally time to get things together and live like no one else, so later we can live like no one else.

With that said, Vicky and I both agreed that there were certain things around the house that we needed to plan for and figure out a way to cash flow. One of those items was replacing our 9 year old barbecue smoker that was becoming a very real fire hazard. The firebox was rusting out at a high rate of speed and it was only a matter of time before it gave way and dropped a load of hot coals onto my wooden deck.

Fortunately, during my last call out week at work the duty manager was kind enough to bless me with more overtime than I could say grace over. As a result we were able to wander down to the local purveyor of fine Weber grills and pay cash for a Weber Smokey Mountain 22.5" smoker. You know, when you pay cash for stuff now most cashiers look at you strange, it's a nice feeling.

All last week, Vicky was planning her attack for Saturday. Friday night, she took a pork shoulder and started working it over with three different rubs, Pecan Honey, KC Rub, and South Side Meat Market rub. The shoulder sat in the refrigerator over night. The next morning the pork shoulder got another round of rubs and went into the smoker about 10:15. The shoulder got hit with Southern Mop Sauce three different times during the last couple of hours of smoking. It came out of the smoker about 6:30 that evening.

To go with the pork shoulder, Vicky also did a rack of pork ribs. They got the same rub treatment Saturday morning and went into the smoker about 1:00. During their last hour of smoking they got hit with the mop sauce twice.

They were beyond fantastic! Personally I am thinking of sending Vicky and her ribs out to work the Professional Barbecue competition circuit.

To go with the 'Q we had to have some garlic & dill new potatoes, once again Vicky outdid herself.

And to top it off, I found a new offering from Shiner Boch in the cooler at our local store, Shiner Smokehaus beer. What better thing to drink than a Shiner Smokehaus with some fine Texas barbecue!

The only kink in the works is tomorrow morning I have to do blood work at the doctor. I'm sure though that my Cholesterol numbers are going to look real nice! We do have a cunning plan to correct that though. Seeing as how my doctor lives across the fence from me, him and his wife are getting an invite for the next round of barbecue perfection.
